Two white bowls filled with creamy blended pumpkin soup and topped with pumpkin seeds, beside a jar of Zoup Veggie Broth.

Ingredients

  • 2 tbsp olive oil
  • 4 cloves of garlic minced
  • ½ onion chopped
  • 1 carrot chopped
  • 1 tsp oregano
  • 1 tsp ginger
  • 1 tsp thyme
  • Pinch of red pepper flakes
  • Pinch of turmeric
  • 1 can pumpkin
  • 2 tbsp maple syrup
  • ¼ cup coconut milk
  • 1 jar Zoup! Savory Broth

Instructions

  • Add olive oil to a pan and heat on medium-high heat. Then saute the garlic, onion, carrot and spices together until veggies are tender.
  • Once the veggies are cooked, place in a blender and blend veggies with all remaining ingredients until smooth.
  • Return soup to a pan and heat until desired temperature. Serve with coconut milk drizzle and pumpkin seeds for garnish.
