Lemon Chickpea & Rice Soup

Two white bowls filled with brothy soup containing chickpeas, carrots, rice, onion, garnished with a sprig of rosemary and a slice of lemon, in front of a jar of Zoup Chicken Broth.

Ingredients

  • tbsp olive oil
  • 1 white onion chopped
  • 3 carrots peeled and chopped
  • 10 cloves garlic minced
  • ¾ cup rice
  • 2 tsp italian seasoning
  • 1 tsp red pepper flakes
  • 8 cups Zoup! Chicken Broth
  • 1 sprig of rosemary
  • ½ tsp black pepper to taste
  • 2 15 oz cans of chickpeas
  • ½ cup lemon juice
  • Salt to taste

Instructions

  • dd olive oil to large pot over medium heat. Add onion and carrot and cook until onions are translucent.
  • Add garlic, rice, italian seasoning, and red pepper flakes. Cook for about 2 more minutes.
  • Add Zoup! Chicken Broth and rosemary. Increase heat to high. Once it begins to boil, reduce to low and simmer for 10 minutes.
  • Add chickpeas and cook for another 3 minutes. Then turn heat off and add lemon juice and salt to taste.
