One Pot Asparagus Pasta
One pot pasta is great. But you know what makes it amazing? Replace your pasta water for broth and bam! All that good, really good flavor in your favorite pasta dish.

Ingredients
- 1 tbsp olive oil
- 2 shallots sliced
- 1 tsp salt
- ½ tsp pepper
- 1 lb asparagus
- 12 oz pasta
- 3 cups Zoup! Chicken Broth
- 1 cup peas
- 2 tbsp lemon juice
- 1 tsp lemon zest
- ¼ cup parmesan cheese
- 2 tbsp butter
Instructions
- In a large saucepan over medium heat add the olive oil and saute the shallots until softened. Add salt and pepper to the onions and stir.
- Add the asparagus, pasta, Zoup! Chicken Broth and peas. Cover and bring to a boil. Then reduce to a simmer and cook for 11 minutes.
- Remove from heat and incorporate the lemon juice, lemon zest, parmesan and butter until well combined. Serve while hot and enjoy!
