French Onion Soup
Soup season is here! Cooler weather means cozier meals. There isn't much better than a French Onion Soup layered with melted cheese on top of cheese.
Servings: 4
Ingredients
- ½ cup butter
- 4 onions thinly sliced
- 2 garlic cloves minced
- 2 bay leaves
- 2 fresh thyme sprigs
- 1 cup red wine
- 2 tbsp soy sauce
- 3 tbsp flour
- 8 cups or 2 jars of Zoup! Good Really Good® Beef Bone Broth
- 2 tbsp soy sauce
- 4 croissants
- ½ pound grated Gruyere or Swiss cheese
Instructions
- Melt the butter in a large pot over medium heat. Add the onions, garlic, bay leaves, and thyme Cook until onions are soft and caramelized (about 30 minutes).
- Add the wine and bring to a boil. Reduce heat and simmer until the wine has been completely absorbed. Remove the bay leaf and thyme sprigs. Add the flour and heat on low until onions are coated and appear dull.
- Add the Zoup! Good, Really Good® Beef Bone Broth & soy sauce. Bring to a simmer and cook for ten minutes.
- While the soup is cooking, cut the croissant into small, bite-size pieces. Place on a baking sheet and bake at 400 degrees for 8 minutes or until nicely toasted.
- Remove croissant croutons from the oven and set aside.
- Preheat the oven to broiler.
- Ladle your soup into oven-safe bowls. Top with your croissant croutons. Cover with your cheese.
- Bake in the oven until the cheese is melted completely and enjoy!
