2tbspolive oil
1lbgold potatoes
2tspsalt
¼tsppepper
2tbspbutter
1shallotchopped
3clovesgarlicminced
1cupheavy cream
½cupZoup! Savory Broth
½package of Boursin cheese
2sprigs rosemary
1tsplemon zest
2tbsplemon juice
2tbspcapers
1lbcod
Instructions
Preheat oven to 450 degrees.
In a large baking dish add chopped potatoes and drizzle with 1 tbsp olive oil, 1 tsp salt and pepper. Toss until well coated. Roast for 20 - 25 minutes until tender.
While the potatoes roast, saute chopped shallot and garlic with 1 tbsp olive oil in a saucepan until soft. Pour in the cream, Zoup! Savory Broth, rosemary, and Boursin cheese and heat until well incorporated.
Turn off heat and add the lemon zest, lemon juice and capers.
