Lemon, Chickpea & Rice Soup
Thirty minutes is all you need for this easy Lemon Chickpea Rice Soup made with our Zoup! Good, Really Good® Broth.
Ingredients
- tbsp olive oil
- 1 white onion chopped
- 3 carrots peeled and chopped
- 10 cloves garlic minced
- ¾ cup rice
- 2 tsp italian seasoning
- 1 tsp red pepper flakes
- 8 cups Zoup! Good Really Good® Chicken Broth
- 1 sprig of rosemary
- ½ tsp black pepper to taste
- 2 15 oz cans of chickpeas
- ½ cup lemon juice
- Salt to taste
Instructions
- dd olive oil to large pot over medium heat. Add onion and carrot and cook until onions are translucent.
- Add garlic, rice, italian seasoning, and red pepper flakes. Cook for about 2 more minutes.
- Add Zoup! Good, Really Good® broth and rosemary. Increase heat to high. Once it begins to boil, reduce to low and simmer for 10 minutes.
- Add chickpeas and cook for another 3 minutes. Then turn heat off and add lemon juice and salt to taste.
