Ingredients
1tbspolive oil
2cupscouscous
2cupsZoup! Chicken Bone Broth
1tbspolive oil
12ozasparagus
1tspDijon mustard
2tsplemon zest
½tspItalian seasoning
¼cupolive oil
½lemon juice
4ozcrumbled feta cheese
2tsphoney
Salt and pepperto taste
Instructions
Add 1 tbsp olive oil to a medium pot and toast the couscous. Then add Zoup! Chicken Bone Broth and bring a boil. Reduce to simmer, cover and let sit for 6 - 8 minutes or until couscous is tender.
While your couscous is cooking, chop asparagus and saute in a pan with olive oil.
Add the couscous and asparagus to a large bowl and set aside to cool.
Mix together the remaining ingredients to create the dressing. Then toss into the couscous and aspargus until well combined.
