Asparagus Couscous Salad

This Spring Couscous Salad is a fresh, feel-good side that fits right in at family gatherings, picnics, celebrations. 🌿 And here’s the simple upgrade that makes all the difference: cook your couscous in 2 cups of Zoup! Chicken Bone Broth for a rich, savory depth you can really taste in every bite.

Ingredients

  • 1 tbsp olive oil
  • 2 cups couscous
  • 2 cups Zoup! Chicken Bone Broth
  • 1 tbsp olive oil
  • 12 oz asparagus
  • 1 tsp Dijon mustard
  • 2 tsp lemon zest
  • ½ tsp Italian seasoning
  • ¼ cup olive oil
  • ½ lemon juice
  • 4 oz crumbled feta cheese
  • 2 tsp honey
  • Salt and pepper to taste

Instructions

  • Add 1 tbsp olive oil to a medium pot and toast the couscous. Then add Zoup! Chicken Bone Broth and bring a boil. Reduce to simmer, cover and let sit for 6 - 8 minutes or until couscous is tender.
  • While your couscous is cooking, chop asparagus and saute in a pan with olive oil.
  • Add the couscous and asparagus to a large bowl and set aside to cool.
  • Mix together the remaining ingredients to create the dressing. Then toss into the couscous and aspargus until well combined.
