Ingredients
- 1 tbsp olive oil
- 2 cups couscous
- 2 cups Zoup! Chicken Bone Broth
- 1 tbsp olive oil
- 12 oz asparagus
- 1 tsp Dijon mustard
- 2 tsp lemon zest
- ½ tsp Italian seasoning
- ¼ cup olive oil
- ½ lemon juice
- 4 oz crumbled feta cheese
- 2 tsp honey
- Salt and pepper to taste
Instructions
- Add 1 tbsp olive oil to a medium pot and toast the couscous. Then add Zoup! Chicken Bone Broth and bring a boil. Reduce to simmer, cover and let sit for 6 - 8 minutes or until couscous is tender.
- While your couscous is cooking, chop asparagus and saute in a pan with olive oil.
- Add the couscous and asparagus to a large bowl and set aside to cool.
- Mix together the remaining ingredients to create the dressing. Then toss into the couscous and aspargus until well combined.
