Ingredients
1tbspolive oil
1medium onionchopped
2clovesof garlicminced
6cupsof water
6tspof Chicken Bone Broth Culinary Concentrates
½cuprice
2cupscookedshredded chicken
2large eggs
½cuplemon juice
Salt and pepper to taste
Instructions
In a large soup pot, saute onion and garlic in olive oil. Pour in the water and Chicken Bone Broth Culinary Concentrates. Then add rice and cook for 10 - 12 minutes or until rice is tender.
Whisk the eggs in a bowl until frothy. Slowly add the lemon juice whisking until combined. Temper the Egg-Lemon mixture by gradually adding 1 - 2 cups of hot broth into the egg mixture until tempered and combined. Add to the pot.
Add the chicken and season to taste. Serve and enjoy!
