Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 2 cloves of garlic minced
- 6 cups of water
- 6 tsp of Chicken Bone Broth Culinary Concentrates
- ½ cup rice
- 2 cups cooked shredded chicken
- 2 large eggs
- ½ cup lemon juice
- Salt and pepper to taste
Instructions
- In a large soup pot, saute onion and garlic in olive oil. Pour in the water and Chicken Bone Broth Culinary Concentrates. Then add rice and cook for 10 - 12 minutes or until rice is tender.
- Whisk the eggs in a bowl until frothy. Slowly add the lemon juice whisking until combined. Temper the Egg-Lemon mixture by gradually adding 1 - 2 cups of hot broth into the egg mixture until tempered and combined. Add to the pot.
- Add the chicken and season to taste. Serve and enjoy!
