Lemon Rice Chicken Soup

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves of garlic minced
  • 6 cups of water
  • 6 tsp of Chicken Bone Broth Culinary Concentrates
  • ½ cup rice
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • ½ cup lemon juice
  • Salt and pepper to taste

Instructions

  • In a large soup pot, saute onion and garlic in olive oil. Pour in the water and Chicken Bone Broth Culinary Concentrates. Then add rice and cook for 10 - 12 minutes or until rice is tender.
  • Whisk the eggs in a bowl until frothy. Slowly add the lemon juice whisking until combined. Temper the Egg-Lemon mixture by gradually adding 1 - 2 cups of hot broth into the egg mixture until tempered and combined. Add to the pot.
  • Add the chicken and season to taste. Serve and enjoy!
