2lbssweet potatoespeeled and cubed
¼cupbutter
1tbspmiso paste
¼tsppepper
¾cupZoup! Savory Vegan Broth
½tspsalt
Fresh thyme
Instructions
Place potatoes in a steamer basket over a pot of boiling water. Cook until fork tender, about 30 minutes.
While the potatoes cook, cream 2 tbsp of the butter and miso paste together with a fork. Add black pepper and set aside.
Mash the sweet potatoes. Add the remaining softened butter, broth, and salt.
Transfer to a bowl and top with miso butter and garnish with thyme.
