Ingredients
- 2 lbs sweet potatoes peeled and cubed
- ¼ cup butter
- 1 tbsp miso paste
- ¼ tsp pepper
- ¾ cup Zoup! Savory Vegan Broth
- ½ tsp salt
- Fresh thyme
Instructions
- Place potatoes in a steamer basket over a pot of boiling water. Cook until fork tender, about 30 minutes.
- While the potatoes cook, cream 2 tbsp of the butter and miso paste together with a fork. Add black pepper and set aside.
- Mash the sweet potatoes. Add the remaining softened butter, broth, and salt.
- Transfer to a bowl and top with miso butter and garnish with thyme.
