Mashed Sweet Potato

Ingredients

  • 2 lbs sweet potatoes peeled and cubed
  • ¼ cup butter
  • 1 tbsp miso paste
  • ¼ tsp pepper
  • ¾ cup Zoup! Savory Vegan Broth
  • ½ tsp salt
  • Fresh thyme

Instructions

  • Place potatoes in a steamer basket over a pot of boiling water. Cook until fork tender, about 30 minutes.
  • While the potatoes cook, cream 2 tbsp of the butter and miso paste together with a fork. Add black pepper and set aside.
  • Mash the sweet potatoes. Add the remaining softened butter, broth, and salt.
  • Transfer to a bowl and top with miso butter and garnish with thyme.
