Ingredients
- 1 tbsp vegetable oil
- 1 medium yellow onion, coarsely chopped
- 5 cloves garlic, finely dice
- 1-2 jalapeno or serrano pepper, seeds removed and rough chopped
- 2 tbsp cumin, ground
- 2 tbsp oregano, dried
- 1 tsp chili powder
- 1 14 oz can diced tomatoes and green chiles
- 1 32oz Zoup Original Chicken Broth
- 2 cups rotisserie chicken, shredded
- 3/4 cup frozen corn
- 1 cup canned black beans
- 1/2 cup cilantro, chopped (reserve ½ for garnish if desired)
- kosher salt to taste
- black pepper to taste
Garnish Options
- 6 sprigs Cilantro rough chop
- 1 avocado dice
- 1 lime wedge
- 1 jalapeno slices
- 1/2 cup sour cream
- 1/2 cup cheddar cheese shredded
- Crispy tortilla strips see recipe below for homemade option
HomeMade Crispy Tortilla Strips
- 1/2 cup vegetable oil
- 6-8 ea corn tortilla cut into 1/4 -3/8 “strips
- Kosher salt
- Paprika
Instructions
- Heat a large saucepan over medium heat, add oil.
- Add onion, jalapeno, garlic and sauté until veggies soften.
- Add cumin, oregano, chili powder and salt, simmer for 3-4 minutes.
- Add diced tomato and chiles and Zoup Original Chicken Broth.
- Bring to a boil and simmer for 25 minutes.
- Using an immersion blender and blend until smooth, but still has a little texture.
- Add chicken, corn and black beans, cilantro simmer for another 10-15 minutes.
- Season to taste and add lime juice.
- Serve with crispy tortilla strips and any other desired garnish options.

- Heat oil in pan over medium to high heat.
- When the oil is hot, fry strips in small batches and allow to drain on a paper towel.
