Lentil Vegetable Soup

Hearty vegetable soup in a white bowl, filled with lentils, tomatoes, carrots, zucchini, kale, and onion in a rich tomato broth, served with slices of crusty bread and a bottle of Zoup veggie broth in the background.

Ingredients

  • tbsp olive oil
  • 1 ½ cups diced carrot
  • 1 yellow onion chopped
  • 4 cloves of garlic minced
  • 2 cups Zoup! Savory Broth
  • 2 cans diced tomatoes
  • 1 cup of dried lentils
  • 1 tsp dried basil
  • ½ tsp oregano
  • ½ tsp thyme
  • 1 medium zucchini diced
  • 2 cups packed kale
  • 1 tbsp lemon juice
  • 1 cup water
  • Salt and pepper to taste

Instructions

  • Add olive oil to a large soup pot and saute the carrot, onion and garlic until the onion is translucent.
  • Add Zoup! Savory Broth and tomatoes, stir until well combined. Add lentils and spices. Bring to a boil, cover and simmer for 30 minutes stirring occasionally.
  • Add the kale and zucchini. Cook for an additional 10 minutes.
  • Stir in lemon juice and water until you’ve reached desired consistency.
