Spring Vegetable Pasta

Ingredients

  • 1 jar Zoup! Chicken Broth
  • 12 oz pasta
  • 1 cup asparagus chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup olive oil
  • 1 lemon juice and zest
  • 2 cloves garlic minced
  • ¼ cup basil chopped
  • ¼ cup parmesan cheese
  • Salt and pepper to taste

Instructions

  • Bring Zoup! Chicken Broth to a boil and prepare the pasta according to package instructions. In the last 3 minutes of cooking, add the asparagus.
  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt and pepper.
  • Add the cooked pasta, asparagus, and cherry tomatoes to the bowl. Toss to combine.
  • Stir in the basil and Parmesan cheese. Serve warm and enjoy!
