Watermelon Gazpacho

Now this is our favorite taste of summer! This Watermelon Gazpacho is served cold giving you a refreshing meal to enjoy all summer long.

Two white bowls filled with blended watermelon gazpacho and topped with halved cherry tomatoes, cucumber slices and a sprig of mint in front of a jar of Zoup Chicken Broth.

Ingredients

  • 3 cups cubed watermelon
  • ½ cucumber peeled and chopped
  • 1 tbsp red onion
  • 1 tomato chopped
  • 1 cup Zoup! Chicken Broth
  • cup cilantro
  • 1 tbsp lemon juice
  • 1 tbsp vinegar
  • ½ tbsp mint
  • 1 tsp hot sauce
  • Dash of chili powder
  • Dash of Italian seasoning
  • Dash of salt

Instructions

  • Blend all ingredients in a blender until smooth. Serve chilled and garnish with tomato, cucumber and mint.
