Spicy Pumpkin Soup
To celebrate Pumpkin Spice Season, we're bringing a healthy dose of pumpkin to the kitchen. This Spicy Pumpkin Soup will become a Fall dinner staple in your household packed with pumpkin, ginger, cayenne and Zoup! Savory Broth.

- 1 tbsp olive oil
- ½ large onion chopped
- 2 medium carrots chopped
- 3 cloves of garlic minced
- ½ tbsp fresh ginger
- 2 cups pumpkin puree
- ½ tbsp thyme
- 1 tsp salt
- ½ tsp pepper
- ½ tsp cumin
- 1.4 tsp nutmeg
- ½ tsp chili powder
- 2 cups Zoup! Savory Broth
- ¼ cup cream
- Pumpkin seeds for garnish

- In a large soup pot, add the olive oil and saute chopped onions until translucent. Add the chopped carrots and cook for 5 minutes or until softened. Add the garlic and ginger.
- Add the pumpkin, thyme, salt, pepper, cumin, nutmeg, chili and Zoup! Savory Broth. Bring to a boil, reduce heat and simmer for 15 minutes.
- Either using an immersion blender or blender, puree the soup. Then add cream and stir until well incorporated.
- Garnish with more cream and pumpkin seeds.
