Creamy Lemon Clams

The best part about clams? The broth to dunk in! We've got an easy and delicious Creamy Lemon Clams recipe that will make you soak the sauce up 'til the last drop.
Cook Time: 30 minutes
Servings: 2

Ingredients

  • 1 lb clams
  • 3 tbsp butter
  • cup chopped onion
  • 2 cloves minced garlic
  • ¼ cup white wine
  • cup Zoup! Good Really Good® Seafood Broth
  • 2 tbsp lemon
  • ¼ cup heavy cream
  • Lemon sliced for serving

Instructions

  • Place the clams in a large bowl and cover with cold water. Let sit for at least 30 minutes. Drain and rinse clams.
  • In a large pot with lid, melt butter over medium heat and saute onions until translucent. Add garlic and cook for a few more minutes. Stir in wine, broth, and lemon and bring to a boil. Reduce heat to medium and simmer.
  • Add the clams to the broth and cover the pot with a lid. Cook clams for approximately 8 minutes or until clams are open.
  • Serve immediately with bread. Add more lemon, salt and pepper to taste. Enjoy!

Salsa Verde

Nothing says a three day weekend quite like fresh salsa. We’re whipping up some Salsa Verde made with roasted tomatillos and finished off with none other than Zoup! Good, Really Good chicken broth.
Cook Time: 30 minutes
Servings: 6

Ingredients

  • 8 medium tomatillos
  • 3 garlic cloves
  • 1 small onion
  • 3 jalapeños
  • ¼ cup cilantro
  • ½ tsp sugar
  • Salt to taste
  • 2 tbsp olive oil
  • 1 cup Zoup! Good, Really Good® Chicken Broth
  • 4 tbsp lime juice

Instructions

  • On a grill pan or BBQ over medium heat add garlic cloves, tomatillos, onion (chopped in quarters), and jalapeños. Grill until brown spots form. Remove and let cool.
  • Peel garlic and scrape burnt skin off chiles. Chop onions, jalapeños and garlic.
  • Transfer tomatillos and all vegetables to a blender. Add the cilantro and sugar. Blend until smooth. Season with salt to taste.
  • Add olive oil to a large saucepan over medium heat. Add the blended mixture and stir until slightly thickened. Add broth and lime juice. Bring to a boil.
  • Reduce heat and simmer for 10 minutes. Season to taste with more salt, sugar and/or lime. If you are making ahead, let chill in fridge.

Ingredients

  • 3 cups cubed watermelon
  • ½ cucumber peeled and chopped
  • 1 tbsp red onion
  • 1 tomato chopped
  • 1 cup Zoup! Good, Really Good® Chicken Broth
  • cup cilantro
  • 1 tbsp lemon juice
  • 1 tbsp vinegar
  • ½ tbsp mint
  • 1 tsp hot sauce
  • Dash of chili powder
  • Dash of Italian seasoning
  • Dash of salt

Instructions

  • Blend all ingredients in a blender until smooth. Serve chilled and garnishh with tomato, cucumber and mint.

One Pot Asparagus Pasta

One pot pasta is great. But you know what makes it amazing? Replace your pasta water for broth and bam! All that good, really good flavor in your favorite pasta dish.

Ingredients

  • 1 tbsp olive oil
  • 2 shallots sliced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 lb asparagus
  • 12 oz pasta
  • 3 cups of Zoup! Good, Really Good® Chicken Broth
  • 1 cup peas
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ cup parmesan cheese
  • 2 tbsp butter

Instructions

  • In a large saucepan over medium heat add the olive oil and saute the shallots until softened. Add salt and pepper to the onions and stir.
  • Add the asparagus, pasta, Zoup! Good, Really Good® Chicken Broth and peas. Cover and bring to a boil. Then reduce to a simmer and cook for 11 minutes.
  • Remove from heat and incorporate the lemon juice, lemon zest, parmesan and butter until well combined. Serve while hot and enjoy!

Crab Bisque is one of those dishes that seems decadent and for special occasions but we can assure you, it's so easy!

Ingredients

  • 3 tbsp butter
  • 1 medium onion chopped
  • 2 stalks celery chopped
  • 1 tsp celery salt
  • 1 tsp paprika
  • 2 cloves minced garlic
  • 2 tbsp tomato paste
  • 3 tbsp flour
  • 4 cups of Zoup! Good Really Good® Seafood Broth
  • 1 cup white wine
  • ½ cup heavy cream
  • 1 lb crab meat
  • Basil for garnish

Instructions

  • In a soup pan over medium heat, melt the butter and saute the chopped onion and celery until softened.
  • Add the celery salt, paprika, garlic and tomato paste. Mix together until veggies are evenly coated.
  • Add flour until well combined. Then add the Zoup! Good, Really Good® Seafood Broth and white wine. Bring to a boil and then simmer for 30 minutes.
  • Blend in a blender until smooth. Then return to your pot and heat on low. Add the heavy cream and crab meat. Stir until well combined and your desired temperature.
  • Serve immediately and garnish with chopped basil. Enjoy!

Ingredients

  • ¾ cup marinated red bell pepper
  • 2.5 cups Zoup! Good Really Good® Chicken Broth
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • ½ celery stick finely chopped
  • 1 clove garlic minced
  • ½ cup Arborio rice
  • ¼ cup white wine
  • 1 piece of burrata cheese
  • 2 tbsp pesto

Instructions

  • Heat the Zoup! Good, Really Good® Chicken Broth in a pot over medium heat until boiling. Then reduce heat to simmer.
  • Place marinated red bell peppers in a blender and add a few ladles of the hot broth. Blend until smooth and set aside.
  • In a separate large pot, heat the olive oil over medium heat. Then saute the onion, celery and garlic until onion is translucent and celery is soft. Add the Arborio rice and cook for several minutes until slightly toasted.
  • Add in the bell pepper mixture and wine. Cook until liquid is completely absorbed into the rice.
  • Then ladle hot broth slowly into the rice. Add one ladle at a time and stir until liquid is absorbed into the rice. Then add another ladle until all liquid is absorbed. This will typically take 15 – 20 minutes or until rice is soft.
  • Once the risotto is complete, serve in two bowls. Top each bowl of risotto with half a ball of burrata and fresh pesto. Garnish with salt, pepper and fresh basil.

Roasted Butternut Squash Soup

This Roasted Butternut Squash soup has so much flavor! We first roasted the vegetables and then cooked with Zoup! Good, Really Good Chicken Broth.

Ingredients

  • 1 lb butternut squash cubed
  • 1 apple sliced
  • 1 onion sliced
  • 1- inch piece of ginger sliced
  • 4 cloves garlic
  • Salt & pepper
  • 2 cups Zoup! Good, Really Good® Chicken Broth
  • 1 cup coconut milk
  • ½ tsp turmeric
  • Pinch of red pepper flakes

Instructions

  • Preheat the oven to 425 degrees. In a large baking sheet, add the butternut squash, apple, onion, ginger and garlic. Season with salt and pepper.
  • Bake veggies for 25 minutes. Remove from oven and let cool. Blend veggies in blender and pour into a large soup pan.
  • Add the coconut milk, turmeric and red pepper flakes. Mix until well combined. Heat over medium heat until boiling. Reduce to simmer and cook for 5 minutes.

Baked Potato Soup

All your favorite flavors of a loaded baked potato are packed into this tasty soup.
Total Time: 1 hour 30 minutes

Ingredients

  • 2 russet potatoes
  • 3 tbsp butter
  • ½ shallot diced
  • cup flour
  • 1 cups milk
  • 2 cups Zoup! Good, Really Good® Chicken Broth
  • ¼ cup sour cream
  • Salt and pepper to taste
  • For garnish: shredded cheddar cheese bacon, chives

Instructions

  • Preheat oven to 350 degrees. Prick your potatoes with a fork all over. Then place the potatoes on the oven rack and bake for 1 – 1.5 hours.
  • Remove the potatoes from the oven and let cool. Then peel the skin off of the potatoes. Cut the cooked potatoes into cubes and set aside.
  • In a large pot, add the butter and shallots to the pan. Saute the shallots until translucent. Then add the flour and coat evenly.
  • Add the milk and Zoup! Good, Really Good® Chicken Broth until well combined and the flour is well incorporated.
  • Stir in the potatoes and using an immersion blender, blend the potatoes until smooth. Stir in the sour cream. Taste and adjust with salt and pepper to taste.
  • Serve immediately and top with your favorite baked potato ingredients such as shredded cheddar cheese, bacon and chives.

  • Pressure cooker

Ingredients

  • 1 tbsp olive oil
  • 4 medium carrots chopped
  • 1 onion chopped
  • 4 cloves of garlic minced
  • 1 ½ cup Zoup! Good Really Good® Chicken Bone Broth
  • 2 cans of Fire Roasted Crushed Tomatoes
  • 1 tbsp dried basil
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  • Turn your pressure cooker to the “saute” setting. Add the olive oil and saute the carrots and onion until softened. Then add the garlic and cook for a few more minutes.
  • Turn your pressure cooker to “High” and add the remaining ingredients into the pressure cooker. Stir until well combined. Then close the pressure cooker with the lid and cook on high for 12 minutes.
  • Slow or quick release. Then blend with an immersion blender or traditional blender until smooth. Serve immediately and enjoy!

Ingredients

  • 2 tbsp olive oil
  • 3 – 4 cloves of minced garlic
  • 1 ⅓ cups Zoup! Good Really Good® Chicken Broth
  • ¼ cup white wine
  • 2 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 1 cup rice
  • 4 chicken thighs
  • Salt and pepper
  • Thyme
  • Lemon slices

Instructions

  • Preheat oven to 400 degrees fahrenheit.
  • In a medium bowl, whisk together the olive oil, minced garlic, Zoup! Good, Really Good® Chicken Broth, white wine, lemon juice and Italian seasoning. Set aside.
  • In an oven-safe, casserole dish add the rice to the pan and spread easily. Add the broth mixture you just whisked together into the casserole dish.
  • Place the chicken thighs in the liquid. Season with salt and pepper, add the thyme sprigs and lemon slices.
  • Cover with foil and bake for 30 minutes. Remove the foil and cook for an additional 20 minutes or until the internal temperature of your chicken is 165 degrees.
  • Serve immediately and enjoy!

Ingredients

  • 3 lb Boneless Pork Shoulder
  • cup brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 2 tsp salt
  • 1 tsp cumin
  • 1 tsp pepper
  • ½ tsp chili powder
  • ½ cup Zoup! Good Really Good Beef Bone Broth
  • cup Apple Cider Vinegar
  • 1 tbsp Worcestershire sauce
  • BBQ Sauce
  • Buns

Instructions

  • In a medium bowl create the rub for the pork. Mix together the brown sugar, garlic powder, onion powder, paprika, cumin, salt, pepper and chili powder. Then evenly rub it into the pork using your hands until all sides of the meat are coated.
  • In a slow cooker, add the broth, vinegar, & Worcestershire sauce. Stir until well combined. Then add the pork to the crockpot and cook on low for 12 hours.
  • Once the pork is fully cooked, remove to a large tray and shred the pork. Serve the shredded pork with BBQ sauce on your favorite buns.
