Ingredients
- 2 tbsp olive oil
- 1 lb gold potatoes
- 2 tsp salt
- ¼ tsp pepper
- 2 tbsp butter
- 1 shallot chopped
- 3 cloves garlic minced
- 1 cup heavy cream
- ½ cup Zoup! Savory Broth
- ½ package of Boursin cheese
- 2 sprigs rosemary
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 2 tbsp capers
- 1 lb cod
Instructions
- Preheat oven to 450 degrees.
- In a large baking dish add chopped potatoes and drizzle with 1 tbsp olive oil, 1 tsp salt and pepper. Toss until well coated. Roast for 20 - 25 minutes until tender.
- While the potatoes roast, saute chopped shallot and garlic with 1 tbsp olive oil in a saucepan until soft. Pour in the cream, Zoup! Savory Broth, rosemary, and Boursin cheese and heat until well incorporated.
- Turn off heat and add the lemon zest, lemon juice and capers.
