Baked Cod with Roasted Potatoes cooked with Savory Broth

Ingredients

  • 2 tbsp olive oil
  • 1 lb gold potatoes
  • 2 tsp salt
  • ¼ tsp pepper
  • 2 tbsp butter
  • 1 shallot chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup Zoup! Savory Broth
  • ½ package of Boursin cheese
  • 2 sprigs rosemary
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp capers
  • 1 lb cod

Instructions

  • Preheat oven to 450 degrees.
  • In a large baking dish add chopped potatoes and drizzle with 1 tbsp olive oil, 1 tsp salt and pepper. Toss until well coated. Roast for 20 - 25 minutes until tender.
  • While the potatoes roast, saute chopped shallot and garlic with 1 tbsp olive oil in a saucepan until soft. Pour in the cream, Zoup! Savory Broth, rosemary, and Boursin cheese and heat until well incorporated.
  • Turn off heat and add the lemon zest, lemon juice and capers.
