Irish Beef Stew

Ingredients
- 4 diced bacon strips
- 1 tbsp salt
- 1 tbsp black pepper
- 3 lb beef chuck or stew meat cut in 2 inch chunks
- 1 onion diced
- 3 carrots chopped
- 2 celery sticks chopped
- 4 garlic cloves minced
- 2 tbsp tomato paste
- ¼ cup all-purpose flour
- 2 cups Guinness stout
- 2 cups of water
- 2 tsp Zoup! Beef Bone Broth Culinary Concentrate
- 1 lb baby potatoes
- 2 bay leaves
- 1 cup frozen peas
Instructions
- Preheat oven to 350 degrees fahrenheit.
- Over medium heat, saute bacon in a large dutch oven. Once browned, remove and set aside.
- Season beef with salt and pepper. Then sear the beef on all sides for 4 - 5 minutes. Remove from pan and set aside.
- Saute the onion, celery, and carrots for 3 - 4 minutes. Add the garlic and cook for another minute. Add tomato paste and stir until well coated. Sprinkle vegetables with flour and stir to coat evenly.
- Pour in the Guiness stout, water and Zoup! Beef Bone Broth Culinary Concentrate. Return the beef and bacon to the pot. Add the baby potatoes and bay leaves.
- Cover Dutch oven with lid and transfer to oven for 3 - 3/12 hours or until beef is very tender. Discard the bay leaves and stir in the frozen peas.
- Serve alone or over mashed potatoes. Enjoy!
