Lemon Ricotta Pasta

Ingredients

  • 1 lb pasta
  • 1 tbsp Zoup! Culinary Concentrate
  • 1 cup ricotta cheese
  • 1 cup finely grated Parmesan
  • 1 tbsp freshly grated lemon zest
  • ΒΌ cup lemon juice
  • 2 cups of arugula
  • Chili flakes for serving
  • Salt & pepper to taste
  • Basil for garnish

Instructions

  • Bring water and 1 tbsp Zoup! Culinary Concentrates to a boil. Add the pasta and cook per instructions until al dente. Reserve 1 cup of pasta broth for sauce and then drain the rest of the broth from pasta. Turn off heat.
  • Add the ricotta, parmesan, lemon zest, lemon juice, salt and pepper to the pan until well combined. Stir in Β½ cup of pasta broth until smooth.
  • Add the pasta and stir until noodles are well covered add more pasta broth to create a smoother sauce.
  • Stir in the arugula and serve immediately! Garnish your pasta with chili flakes and basil. Enjoy!
