Mushroom Risotto

The secret ingredient for the tastiest risotto? Our Portabella Mushroom Bisque! That’s right, the creaminess of our Zoup! Good, Really Good soup brings this risotto to another level.
Cook Time: 40 minutes
Servings: 8

Ingredients

  • 3 cups Zoup! Good Really Good® Veggie Broth
  • 1 ½ cups Zoup! Good Really Good® Portabella Mushroom Bisque
  • 2 tbsp olive oil
  • 1 onion chopped
  • 1 cup arborio rice
  • 1 tbsp chopped thyme
  • ½ cup Parmesan cheese
  • 1 tbsp butter
  • 8 ounces sliced mushrooms

Instructions

  • Heat the broth and bisque in a saucepan over medium heat until hot.
  • In another saucepan, add the olive oil and saute the onion for 5 minutes. Stir in the rice and thyme. Continue to cook for another 5 minutes.
  • Add the hot soup mixture to the rice mixture and heat to a boil. Reduce heat and cook for 15 minutes or until the rice is tender and liquid is absorbed stirring often.
  • While the rice is cooking, saute the mushrooms in the butter until tender. Set aside to garnish the risotto.
  • Once the rice is tender, stir in the parmesan. Serve and top with mushrooms and additional parmesan. Enjoy!

Ingredients

  • 2 medium bell peppers

Instructions

  • Preheat oven to 400 degrees.
  • Cut your bell peppers in half and remove the seeds. Fill with Zoup! Good, Really Good® Black Bean Chili.
  • Sprinkle with cheddar cheese and bake for 20 minutes.

Bringing the red and green to dinner! ???? ???? This easy Tomato Bisque Pasta Bake with spinach and mushrooms comes together in 30 minutes for an easy dinner the whole family will love.

Ingredients

  • 2 jars of Zoup! Good Really Good® Tomato Bisque
  • 8 oz of dry Rigatoni Pasta approximately half a box
  • 2 cups spinach
  • 1 cup mushrooms sliced
  • 1 cup shredded mozzarella

Instructions

  • Preheat oven to 350 degrees and lightly grease a casserole dish.
  • In a large pot, heat Zoup! Good, Really Good® Tomato Bisque until it comes to a boil.
  • Add pasta and cook for 14 minutes stirring occasionally so the pasta does not stick to the pot and is cooked evenly.
  • Turn off the heat and mix in the spinach and mushrooms. Then pour the pasta mixture into casserole dish.
  • Sprinkle with mozzarella cheese. Bake for 20 minutes, serve and enjoy!

Ingredients

  • 2 cloves garlic minced
  • 1 yellow onion chopped
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • 1 tsp salt
  • 1 can kidney beans drained
  • 1 can black beans drained
  • 1 can diced tomatoes with jalapeno
  • 1 can pumpkin puree
  • 5 tbsp tomato paste
  • 2 cups Zoup! Good Really Good® Beef Bone Broth

Instructions

  • In a soup pot, heat olive oil over medium heat and saute the garlic and onion until translucent. Add the ground beef and brown.
  • Add the chili powder, cumin, garlic powder, salt and pepper. Mix until ground beef is well coated.
  • Add the kidney beans, black beans, diced tomatoes, pumpkin puree, tomato paste and Zoup! Good, Really Good® Beef Bone Broth. Stir to combine.
  • Cover pot and simmer for 15 minutes. Stir and continue to cook for another 15 minutes. Taste and adjust seasonings to liking. Top with sour cream, cheese, and any other chili topping of your choice. Enjoy!

This salmon dish will sure to become a new staple in your weekly dinner menu! Enjoy this creamy sauce with marinated bell peppers with your seared salmon all cooked to perfection with our Zoup! Good, Really Good Seafood Broth.

Ingredients

  • 4 salmon fillets
  • 3 tbsp olive oil
  • 4 oz sun-dried tomatoes
  • 10 oz marinated roasted bell peppers
  • 1 shallot chopped
  • 4 garlic cloves minced
  • ½ cup Zoup! Good Really Good® Seafood Broth
  • ¼ cup heavy cream
  • ½ cup mascarpone
  • ½ cup parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper
  • Basil leaves for garnish

Instructions

  • Pat the salmon dry with a paper towel and season with salt and pepper.
  • Heat olive oil in a pan over medium high heat. Add the salmon and sear for 4 minutes each side. Remove and set aside.
  • Add the shallot to pan and cook over low heat for 1 – 2 minutes. Stir in the garlic and cook for another minute. Add the Zoup! Good, Really Good® Seafood Broth to deglaze the pan. Add the sun dried tomatoes, bell peppers, and cream.
  • Once it starts to boil, add the mascarpone and parmesan cheese. Stir until creamy. Add the salmon back to the sauce. Sprinkle with lemon juice and continue to cook until salmon is cooked through and sauce is thickened.
  • Remove from heat, garnish with basil and enjoy!

Ingredients

  • 1 tbsp butter
  • ½ small onion diced
  • ¼ cup carrots diced
  • ¼ cup celery diced
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp mustard powder
  • ½ tsp hot sauce
  • ½ tsp Worcestershire sauce
  • 2 ½ cups Zoup! Good Really Good® Chicken Bone Broth
  • ½ lb chicken cooked
  • ¼ cup heavy cream
  • 1 cup spinach
  • ¼ cup parmesan cheese grated
  • 4 tbsp lemon juice
  • ¼ cup orzo uncooked

Instructions

  • Heat butter over medium heat in a large soup pan. Saute the onion, carrot and celery until softened or about 5 minutes. Then add the garlic and stir until fragrant.
  • Add the seasonings, hot sauce, and Worcestershire sauce and stir until well coated. Then add the Zoup! Good, Really Good® Chicken Bone Broth and chicken and bring to a simmer.
  • While the soup simmers, prepare your orzo according to the packaging in a separate pot. Drain once cooked.
  • Reduce soup to low and stir in the heavy cream. Add the parmesan cheese and stir until melted.
  • Add the spinach and cook until wilted. Remove from heat and then stir in the lemon juice and cooked orzo. Enjoy!

  • 16 ounces pasta
  • 2 tbsp butter
  • 1 can 15 oz of pumpkin puree
  • 4 leaves sage chopped
  • 1 cup milk
  • 1 tsp Zoup! Good Really Good® Veggie Concentrate
  • cup shredded Parmesan cheese
  • Salt & pepper to taste

Instructions

  • Prepare pasta according to box. Strain water and return pasta to pot.
  • On low heat, add the butter, pumpkin, and sage. Stir until well coated.
  • Add the milk and Zoup! Good, Really Good® Veggie Concentrate. Continue to stir until it becomes a creamy consistency.
  • Remove from heat and stir in the parmesan cheese until melted. Add salt and pepper to taste. Garnish with more sage, serve and enjoy!

Ingredients

  • 1 cup Greek yogurt
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp pepper
  • 3/4 cup Zoup! Good Really Good® Chicken Broth
  • 2 large chicken breasts
  • cup balsamic vinegar
  • 2 peaches sliced
  • 1 shallot sliced
  • 3 sprigs fresh thyme
  • ¼ cup fresh basil chopped

Instructions

  • In a medium bowl, whisk together Greek yogurt, honey, 1 tbsp olive oil, vinegar, salt, pepper and ½ cup Zoup! Good, Really Good® Chicken Broth. Place chicken breasts in bowl, toss to coat. Let marinate for at least 1 hour in the refrigerator.
  • Preheat oven to 425 degrees Fahrenheit. Heat 1 tbsp olive oil in a cast iron pan over medium heat. Sear the chicken breasts on each side until golden brown. Pour ¼ cup Zoup! Good, Really Good® Chicken Broth and ⅛ cup balsamic vinegar in to deglaze the pan. Then add the thyme, shallots and peaches.
  • Transfer the cast iron pan to the oven and bake for 20 – 25 minutes or until the chicken has an internal temperature of 160 degrees Fahrenheit.
  • Remove from oven and let rest for 10 minutes. Top with fresh basil and enjoy!

Ingredients

  • ½ tbsp olive oil
  • 3 – 4 bone-in chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • ½ onion chopped
  • 2 cloves garlic minced
  • ½ tsp cumin
  • ½ tsp paprika
  • 1 cup hot water
  • 1 tsp Zoup! Good Really Good® Chicken Bone Broth Concentrate
  • 2 tbsp lemon juice
  • 1 bell pepper chopped
  • ½ cup couscous
  • ¼ cup feta cheese crumbled
  • 1 green onion chopped
  • ½ cup cherry tomatoes halved

Instructions

  • In a large pot, heat olive oil over medium heat. Add chicken to the pan and season with salt and pepper. Cook chicken until browned on both sides.
  • Move chicken to side of pan and add the chopped onion. Cook until onion is translucent. Add the garlic, cumin & paprika. Stir into the onions.
  • Pour in 1 cup of water and 1 tsp Zoup! Good, Really Good® Chicken Bone Broth Concentrate. Bring to a boil. Once it is boiling, reduce to simmer, cover the pot and cook for 10 minutes.
  • Take the lid off and using a thermometer make sure the chicken has reached 165 degrees Fahrenheit. Once the chicken is cooked, remove from pan and set aside.
  • Pour the lemon juice, chopped pepper and couscous into the pan. Stir until well combined. Return the chicken to the pot, cover with lid and cook for 5 minutes.
  • Remove lid and fluff up the couscous with a fork. Once couscous is finished cooking, sprinkle with fete, chopped green onion and cherry tomatoes. Serve and enjoy!

Ingredients

  • 1 lb ground beef
  • 1 egg
  • 2 tbsp chopped parsley
  • 2 garlic cloves minced
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp grated parmesan cheese
  • ¼ cup Italian breadcrumbs
  • ¼ cup milk
  • 1 24 oz can crushed tomatoes
  • ½ cup Zoup! Good Really Good® Beef Bone Broth
  • 1 6 oz can of tomato paste
  • 2 bay leaves
  • Pinch of red pepper flakes
  • ½ tsp Italian seasoning
  • 4 sub rolls
  • 8 slices mozzarella cheese

Instructions

  • In a large slow cooker, mix together the crushed tomatoes, Zoup! Good, Really Good® Beef Bone Broth, tomato paste, bay leaves, red pepper flakes, & Italian seasoning.
  • In a large bowl, mix the ground beef, egg, parsley, garlic cloves, salt, black pepper, parmesan cheese, breadcrumbs and milk together. Form into meatballs and place into the slow cooker. Cover and cook on low for 4 hours or until fully cooked.
  • Preheat the oven to 350 degrees. Cut your sub rolls and fill with meatballs. Place a slice of mozzarella on the top and bake until the cheese is melted – about five minutes.

Ingredients

  • 2 tbsp butter
  • ¼ cup flour
  • 1 cup water
  • 2 tsp Chicken Bone Broth Concentrate
  • 1 cup warm milk
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 2 cups cooked chicken
  • 1 tsp minced garlic
  • 2 tbsp Ranch Dressing Seasoning mix
  • 1 cup sour cream
  • 2 cups mozzarella cheese
  • 7 slices of bacon chopped
  • 8 ounces cooked penne pasta

Instructions

  • First, we make the cream sauce for the casserole. Melt the butter in a saucepan over medium heat. Gradually add the flour and whisk until it looks like wet sand. Remove from heat.
  • Add the water and Chicken Bone Broth Concentrate and whisk well. Then add the warm milk and seasonings. Whisk continuously and turn heat up to medium. Whisk until it gets thick.
  • Preheat oven to 350 degrees. Grease a 9×13 inch casserole dish and set aside.
  • In a large mixing bowl, add the cream sauce, chicken, garlic, ranch dressing seasoning mix, 1 cup sour cream, 1 cup mozzarella cheese, half of the chopped bacon, and pasta. Gently mix until well combined.
  • Add the casserole ingredients to your casserole dish. Then top with remaining cheese and bacon.
  • Bake for 15 – 20 minutes and enjoy!

Ingredients

  • 1 tbsp olive oil
  • 2 salmon fillets
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter
  • 2 cloves garlic minced
  • ¾ cup halved cherry tomatoes
  • 1 cup arugula
  • ¼ cup cream
  • ¼ cup Zoup! Good Really Good® Seafood Broth
  • cup grated parmesan cheese

Instructions

  • Prepare salmon fillets by patting the salmon dry with a paper towel. Then season the salmon with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat for 2 – 3 minutes.
  • Once the pan is hot, add the salmon, skin side up. Leave the salmon for 6 minutes to cook. Flip and cook for 2 more minutes. Transfer to a plate.
  • Reduce heat to low. Add the Zoup! Good, Really Good® Seafood Broth to the pan to deglaze the pan. Scrape any salmon from the pan. Add the butter and let it melt. Stir in the garlic and cook until you begin to smell the garlic.
  • Increase heat to medium and add the cherry tomatoes. Season with salt and pepper. Cook until the tomatoes begin to soften.
  • Stir in the heavy cream & parmesan. Reduce heat to low and stir in the arugula until it begins to wilt.
  • Return salmon back to pan and spoon over sauce. Simmer until the salmon is cooked through. Serve and enjoy!
